Rawghetti Marinara
Since I cracked open my Joyce Chen spiral slicer, this has been a regular dish at my place. You can vary the ingredients as you have available, here is my standard recipe with some suggested variations to complete the dish.
If you don't have a spiral slicer, thick or thin, you can use a veggie peeler or simply chop zucchini or cucumber into small pieces or veggies of your choice.
As a youngster, spaghetti with tomato sauce was definitely my favourite meal and this is a great healthy alternative which emulates the texture and flavour of the traditional cooked dish.
In Australia, Marinara sauce tends to have sea creatures in it, but the traditional Marinara is veg only..
Ingredients:*
5-6 zucchinis or cucumbers
1kg tomatoes
2 dates, pitted
1/4 cup dried tomatoes
1/2 bunch basil (leaves)
1 cup spinach
Garnish: handful olives, avocado, diced tomato
Method:
Put either cucumber or zucchini through a spiraliser or peel into small threads. Set aside in a colander to drain.
Blend tomatoes, dates, dried tomatoes, basil and spinach until smooth. It is ideal but not a necessity to soak dried tomatoes and dates before blending sauce. You can do without the dates if you don't enjoy the food combination with tomato, but I like the sweetness it adds.
Combine sauce with noodles and garnish with any veggies of your choice. To make the sauce creamier, you can add avocado.
Tastes just like spaghetti marinara only healthier :)
